Trick or Treat!

It’s that time of year again where the kiddies bring out their inner gremlin and run rogue!

Might I add, this isn’t made any better with the help of processed sugar highs and the grumpy tantrums that come with the lows.

No thank you.

Look no further! I have compiled a little list of some super yummy treats to save your house from falling victim to any nasty tricks!

Serves: 5 to 10 people
Makes: 10 large fingers

Equipment

  • Sedona Dehydrator with Silicone Drying Sheets.

Ingredients

  • 1 cup walnuts
  • 1 cup activated almonds
  • 1 cup unsweetened desiccated coconut
  • ¼ cup raw honey or organic maple syrup or raw coconut nectar
  • Pinch cinnamon
  • 1 tsp. organic vanilla paste
  • Pinch Himalayan sea salt
  • Blanched almonds for the “fingernails”
  • Spirulina powder (for the green fingers)

Method for the brown fingers

  1. Pulse the walnuts in your Vitamix Dry Container until they form a nice “breadcrumb” consistency. Put them into a large bowl. You might need to scrape down the sides and bottom edges with a spatula in between pulses.
  2. Pulse your activated almonds in your Vitamix Dry Container until they form a nice “breadcrumb” consistency. You might need to scrape down the sides and bottom edges with a spatula in between pulses. Place almond mixture into the bowl with the ground walnuts.
  3. Add to your nut mixture your liquid sweetener of choice, coconut, vanilla paste, sea salt and cinnamon and mix really well. Don’t be scared to get your hands dirty!
  4. Start moulding pieces of your dough into fingers and use a knife to create the knuckle wrinkles. This can be fiddly but fun! You can definitely get the kids to help!
  5. Once all the dough has been moulded, place your “fingers” onto your Sedona Trays using the Silicone Drying Sheet and dehydrate on high, 65 degrees Celsius, for 2 hours.
  6. After 2 hours, lower the temperature to 45 degrees Celsius and dehydrate for roughly 24 hours.

Method for the Green Fingers

1. Follow the steps above for the brown fingers.
2. After step 3, mix 2 tsp. Spirulina Powder really well with a glass of water.
3. Add about 2 tbsp. of the green “food dye” to your dough and mix really well.
4. Proceed with Step 4 from above.

  • 1 Tbsp pine nuts
  • 100mls almonds
  • 1 tsp vanilla bean paste
  • 1 pinch Himalayan sea salt

Ingredients – The Caramel

  • 10 dates (soaked for 24 hours and drained, soaking them is important as this is what creates the caramel flavour)
  • 1/2 tsp Himalayan rock salt
  • 1/2 tsp vanilla paste
  • 1 Tbsp chia seeds
  • 2 Tbsp tahini
  • Water (if needed to make the caramel smooth)
  • 1.5 cups Brazil nuts.

Ingredients – Chocolate Topping

  • 12 Tbsp cacao butter
  • 12 Tbsp cacao powder or carob powder
  • 8 Tbsp maple syrup or sweetener of your choice
  • Pinch Himalayan rock salt

Method – Base

  1. Place your base ingredients into your Vitamix 2L wet container and secure the lid.
  2. Pulse your machine on and off 5 times on HIGH speed for about 2 seconds each time.
  3. Leave your machine on HIGH speed and blend until you have formed a dough to mold into your base. Use your tamper effectively as this is a thick mixture.
  4. Place in a slice tray and freeze for 10 minutes in the freezer.

Method – Caramel

  1. As your base is freezing, place all caramel ingredients into your Vitamix 2L wet container (except for the Brazil nuts) and secure the lid.
  2. Turn your machine on to variable speed 1, immediately turn up to Variable Speed 10 and then quickly override the speed to High.
  3. Blend using your tamper effectively and stop when you have reached a nice smooth consistency.
  4. Pour the caramel layer over your base and sprinkle on top some Brazil nuts or a nut of your choice.
  5. Place back in the freezer to set.

Method – Chocolate topping

  1. Melt you cacao butter and mix well with the cacao powder, maple syrup and salt.
  2. Pour over the top of your base and caramel and set in the freezer for 1 hour.
  3. Eat. Eat it all.
  4. If there happens to be any left add them to an airtight container and store in the freezer.
