Raw Lemon Cookies Submitted by Claire Walters - Raw Blend

Ingredients

  • 1 cup shredded coconut
  • 1/2 cup almonds
  • 1/2 tsp vanilla paste
  • 1/2 cup cashews
  • 3 Tbsp lemon juice
  • 1 Tbsp honey, maple syrup or agave

Method

  1. Put all the dried coconut, almonds and cashews into the Vitamix container in the order listed and secure the lid.
  2. Select high speed and pulse 5 times to form a rough flour. Add the remaining ingredients and pulse another 2 times.
  3. Select speed 1, turn the machine on and quickly increase to the highest speed.
  4. Use tamper effectively to press the ingredients into the blades.
  5. Stop the machine once you have formed a dough.
  6. Roll the batter into a small ball and flatten with your fingers or with a fork. It is easier to do this with slightly damp hands.
  7. Place cookie dough onto dehydrating sheets and dehydrate for up to 8 hours.
  8. Start on 68 degrees C for the first 2 hours and then bring the temperature down to 43 degrees and dehydrate for 8-10 hours. Depending on how hard you want the centre you can always dehydrate them over night.
