Aioli

Makes: 1.5 cups (360ml)

Aioli

Our garlic Aioli recipe is perfect for serving up with your favorite seasonal vegetables.

Equipment

Ingredients

  • 3 large pasteurized egg yolks
  • 1/4 cup (60 ml) lemon juice
  • 1/8 tsp white pepper
  • 3 large garlic cloves (peeled)
  • 1 cup (240 ml) light olive oil

Method

  1. Put egg yolks, lemon juice, salt and pepper into the Vitamix 2L container and secure the lid.
  2. Select Variable 1. Turn the machine on and quickly increase the speed to Variable 8.
  3. Use tamper to effectively press the ingredients into the blades if required whilst processing.
  4. While machine is running, remove the lid plug and drop in garlic cloves through the lid plug opening.
  5. Blend for 10 seconds, then reduce speep to Variable 6.
  6. With the machine still running, slowly pour oil in a thin, steady stream through the lid plug opening until emulsified.
  7. Blend for 45-60 seconds total or until desired consistency is reached.
  8. Stop the machine and serve.

Notes

  • Refrigerate in an airtight container.
