Avocado Cacao Mousse Cake Submitted by Tabitha Schutz - Competition Entry

Ingredients

Ingredients – Base

  • 1 cup almonds
  • 5-6 dates (adding 1 at a time to get a firm sticky consistency)

Ingredients – Filling

  • 2 large ripe avocados
  • 30g raw cacao
  • 4 dates
  • 1 Tbsp shredded coconut
  • 2 tsp coconut oil

Ingredients – Top

  • blueberries
  • chopped walnuts

Method

  1. Place base ingredients in Vitamix blender and blend until combined.
  2. Press into base of 2 small springform pans.
  3. Place filling ingredients in Vitamix blender.
  4. Start on 1, then increase to10, then to high.
  5. Blend for about 30 sec until smooth.
  6. Pour onto base of the 2 bases.
  7. Refrigerate over night.
  8. When serving, place fresh berries on top and chopped walnuts.

Notes

  • Wipe around edges of springform pan with warm cloth to release.
  • Can also sprinkle coconut on base pan so base doesn’t stick.
  • Only use 2 small springform pans or place into 2 cups to serve.
