Banana Caramel Chocolate Layer Cake

Ingredients - Crust

  • 1/2 cup raw almonds
  • 1/2 cup raw cashews
  • 1 cup dates

Ingredients - Banana Layer

  • 3 bananas (frozen)
  • seeds of one vanilla pod

Ingredients - Caramel Layer

  • 1 cup dates
  • 1/4 cup water
  • 1 Tbsp almond butter

Ingredients - Chocolate Layer

Method - Crust

  1. Blend the nuts in your Vitamix until they look like crumbs.
  2. Add the dates and blend until combined and sticking together.
  3. Press into the bottom of a spring form pan and set aside in the freezer.

Method - Caramel and Chocolate layer

  1. Blend all the ingredients in your Vitamix until smooth, thick and creamy.
  2. Place in a bowl and set aside.
  3. Follow the same instructions for the chocolate mixture.

Method - Banana layer

  1. Blend the bananas and vanilla seeds in your Vitamix until thick, smooth, creamy and white.

Method - To assemble the layer cake

  1. Remove the pan with the crust from the freezer and spread the banana mixture over the top.
  2. Next, spread the caramel over that, mixing it into the banana layer a little with a spatula. Then carefully spread the chocolate mixture over this and put it back in the freezer overnight.
  3. When it's ready, let it thaw for 20 minutes before cutting and serving. Enjoy!
