Video Blog: El Gringo Soup

Hola! Today i am going to show you how to make a tasty Mexican style soup called the El Gringo Soup. This recipe uses beautiful fresh raw veggies and delicious traditional Mexican flavours for seasoning.

If you prefer your soup to have some texture, try adding some sweet corn at the end or some mixed beans and then serve with a side of corn chips … velado!

If your planning a little a Mexican Fiesta for your friends you may even want to start with a delicious home made Guacamole and Salsa to serve as guests are arriving. Dish up this delicious El Gringo Soup as starter and then try our tasty Cucumber Burritos and our Raw Tortilla Wraps as a main. You can top it all off with our decadent Chocolate Fondue and add a hint of Chili to give it a little something different … Ole!

Equipment

Ingredients

  • 2 cup filtered water
  • 1 carrot
  • 1 stick celery
  • 1 stick spring onion
  • 1/2 tomato
  • 1/4 red capsicum
  • slice zucchini (end only)
  • 1 leaf raw cabbage
  • 1 button mushroom
  • 1 celery leaf
  • 1 clove garlic
  • 1/4 lime (with peel)
  • chilli (end only)
  • 1 vegetarian stock cube (massel)
  • 1 tsp taco seasoning
  • 1/2 tsp cumin
  • Himalayan salt and pepper (to taste)

Method

  • Put all the ingredients into the Vitamix 2L container in the order listed and secure the lid.
  • Select Variable 1. Turn the machine on and quickly increase the speed to 10, then override to High.
  • Use tamper to effectively press the ingredients into the blades if required whilst processing.
  • Blend for 3-6 minutes or until desired temperature is reached.
  • Stop the machine and serve.

Notes

  • If using hot water run for only 1-2 minutes.
  • Raw Foodist like to only heat their soup to about 45 degrees so no enzymes are lost.
  • This recipe can be reduced by half and made in a Vitamix 0.9L wet container
  • If using a Vitamix Pro 750, you can use the soup setting.
