Video Recipe – Italian Eggplant Sauce

One of those sauces that are just so tasty it hurts! This is the perfect all rounder. Put it on toast, stir it through pasta, use it as a dip or just eat it straight off the spoon! You’re Greenstar Elite juicer isn’t just for juicing did you know? 

Italian Eggplant Sauce

Makes – 600g
Serves – 4+

Ingredients 

  • 1 eggplant (peeled)
  • 200g sundried tomatoes (approx)
  • 1 bunch parsley
  • 2 garlic cloves (peeled)

Ingredients – to stir in

  • 3 tsp tahini
  • 1-2 tsp water
  • 1/2 lime
  • 1 tsp soy sauce

Method 

  1. Use the open blank screen, remove the outlet adjusting knob and turn your juicer on.
  2. Alternate the ingredients into the feeding chute and use the tamper to push the ingredients down.
  3. Once you’ve finished juicing, stir in the extra ingredients, and serve over pasta or as a spread
  4. Store in a sealed jar or bottle in the fridge.
