Fruit & Cinnamon Chia Pudding

Fruit & Cinnamon Chia Pudding

Our Fruit & Cinnamon Chia Pudding Recipe not only tastes great & is easy to make, but it's also gluten-free. Serve as a warm winter breakfast or desert. You can also try our huge collection of other gluten-free recipes.

Equipment

Ingredients - Cashew Cream

  • 2 cup cashews (soaked overnight in the refrigerator)
  • 2 cup water (filtered)

Ingredients - Pudding

  • 1 ¾ cup cashew cream
  • 1/2 cup chia seeds
  • 1/2 cup maple syrup
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • 1 cup strawberries (sliced)
  • 1 cup blueberries

Method - Cashew Cream

  1. Drain and rinse cashews.
  2. Put all the ingredients into the Vitamix 2L container in the order listed and secure the lid.
  3. Select Variable 1. Turn the machine on and quickly increase the speed to 10, then override to High.
  4. Use the tamper to effectively press the ingredients into the blades whilst processing.
  5. Blend for 30-60 seconds or until desired consistency is reached.
  6. Stop the machine.

Method - Pudding

  1. Mix together cashew cream, chia seeds, maple syrup, vanilla and cinnamon. Set aside.
  2. Slice strawberries.
  3. When chia pudding has thickened up (about 5-10 minutes) stir in sliced strawberries and blueberries.
  4. When serving sprinkle some freshly grated nutmeg on top.
