Italian Eggplant Sauce

Makes: approx. 600g

Italian Eggplant Sauce



  • 1 eggplant (peeled)
  • 200g sundried tomatoes (approx)
  • 1 bunch parsley
  • 2 garlic cloves (peeled)

Ingredients - to stir in

  • 3 tsp tahini
  • 1-2 tsp water
  • 1/2 lime
  • 1 tsp soy sauce


  1. Use the open blank screen, remove the outlet adjusting knob and turn your juicer on.
  2. Alternate the ingredients into the feeding chute and use the tamper to push the ingredients down.
  3. Once you've finished juicing, stir in the extra ingredients, and serve over pasta or as a spread
  4. Store in a sealed jar or bottle in the fridge.
