Mexican Raw Taco Salad

Equipment

Ingredients - Raw Taco Mince

  • 2 cup walnuts
  • 1 Tbsp cumin (ground)
  • 1/2 Tbsp coriander (ground)
  • 2 Tbsp low sodium tamari
  • 1 tsp chili powder

Ingredients - Salad

  • 1/2 avocado
  • 2 hearts romaine lettuce
  • 1 tomato (chopped)
  • 1/2 red onion (chopped)
  • 200g black beans
  • 1/3 bunch coriander (chopped)
  • 2 Tbsp lime juice

Optional

  • Cayenne Pepper to sprinkle on top
  • Cooked Quinoa

Method

  1. Put all the Taco Mince ingredients into the Vitamix 2L container in the order listed and secure the lid.
  2. Select Variable 1. Turn the machine on and quickly increase the speed to Variable 4.
  3. Use tamper to press the ingredients into the blades.
  4. Blend until you have a nice mince texture.
  5. Chop tomatos, onion and coriander to make a salsa and mix with the lemon juice.

Plating

  1. Arrange your lettuce on a plate and spoon the “raw taco mince” on top.
  2. Add the salsa and fan some Avocado over the top.
