Perfect Prawn Pouches

Competition Entry - Dips & Spreads Category

Serves: 6 (3 per person)

Ingredients

  • 18 small spring roll wrappers
  • 750g cooked prawns
  • 6 coriander sprigs
  • 1 egg, 1 egg yolk
  • 2 pinches cayenne pepper
  • 18 chives
  • salt and pepper to taste
  • sauce
  • oil
  • vinegar
  • chilli powder
  • soy sauce

Method

  1. Moisten spring roll wrappers and peel the prawns.
  2. Put prawns and coriander in blender and pulse 3 times.
  3. Add eggs, Cayenne pepper, salt and black pepper and blend together. Set aside.
  4. Place a mound of prawn mix in the middle of each sheet. Draw up edges to for a small pouch and secure with a chive.
  5. Arrange the pouches in a bamboo steamer. Cook for 4 minutes with lid on.
  6. Mix together ingredients for sauce until combined.
  7. Serve the prawn pouches immediately with the sauce.
  8. Serves 6 (3 pouches per person)
