Raw Apple Pie

Makes: 1 apple pie

Serves: 8-10

Raw Apple Pie

Equipment

Ingredients - Crust

  • 1 cup cashews, pistachios (mix)
  • 1 cup dried, unsweetened shredded coconut
  • 1/2 medjool dates (pitted)
  • 1/4 tsp sea salt

Ingredients - Filling

  • 3 medium apples
  • 1 cup medjool dates (pitted)
  • 2 Tbsp lemon juice
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg

Method - Crust

  1. Place the crust ingredients into your 2L Vitamix Wet container and pulse on HIGH a few times until a rough, mouldable mixture forms. Make sure to hold the container with one hand for support.
  2. Mould your crust into a glass pie dish and place in the dehydrator to set on a high temperature (65 degrees celsius) for 3hrs
    to help set. This step is optional.

Method - Filling

  1. Put all ingredients except 1 apple the into the Vitamix 2L container in the order listed and secure the lid.
  2. Select Variable 1. Turn the machine on and quickly increase the speed to 10, then override to High.
  3. Use the tamper to effectively press the ingredients into the blades whilst processing.
  4. Pour filling ingredients into your base and decorate with your left over apple.

Notes

Make sure to always check that the nuts that you are buying are gluten free.
