Italian Eggplant Sauce Submitted by Tommy - Raw Blend

A delicious and different way to use your Greenstar Elite Juicer. Give this Italian Eggplant sauce a go. It’s vegan friendly and super tasty!


  • 1 eggplant (peeled)
  • 200g sundried tomatoes (approx)
  • 1 bunch parsley
  • 2 garlic cloves (peeled)

Extra to stir through

  • 3 tsp tahini
  • 1-2 tsp water
  • 1/2 lime
  • 1 tsp soy sauce


  1. Use the open blank screen, remove the outlet adjusting knob and turn your juicer on.
  2. Alternate the ingredients into the feeding chute and use the tamper to push the ingredients down.
  3. Once you’ve finished juicing, stir in the extra ingredients, and serve over pasta or as a spread
  4. Store in a sealed jar or bottle in the fridge.
