Ingredients
- 1 cup shredded coconut
- 1/2 cup almonds
- 1/2 tsp vanilla paste
- 1/2 cup cashews
- 3 Tbsp lemon juice
- 1 Tbsp honey, maple syrup or agave
Method
- Put all the dried coconut, almonds and cashews into the Vitamix container in the order listed and secure the lid.
- Select high speed and pulse 5 times to form a rough flour. Add the remaining ingredients and pulse another 2 times.
- Select speed 1, turn the machine on and quickly increase to the highest speed.
- Use tamper effectively to press the ingredients into the blades.
- Stop the machine once you have formed a dough.
- Roll the batter into a small ball and flatten with your fingers or with a fork. It is easier to do this with slightly damp hands.
- Place cookie dough onto dehydrating sheets and dehydrate for up to 8 hours.
- Start on 68 degrees C for the first 2 hours and then bring the temperature down to 43 degrees and dehydrate for 8-10 hours. Depending on how hard you want the centre you can always dehydrate them over night.
