Santa Hats Cake Submitted by Claire Walters - Raw Blend

A delicious recipe inspired by the Festive season and Santa’s Hat! These little creations are super tasty, vegan and super easy to make!

Ingredients

Ingredients – Crust

  • 2 cups shredded coconut
  • 3/4 cup almond meal
  • 6-8 medjool dates (pitted)
  • 1/2 tsp organic vanilla paste
  • 1/4 tsp sea salt

Ingredients – Lemon Filling

  • 1/4 cup very hot filtered water
  • 1 Tbsp flaked agar agar
  • 1/2 cup lemon juice
  • zest of 1 organic lemon
  • 2 Tbsp raw coconut nectar
  • 1 tsp pure vanilla extract
  • 3 Tbsp raw coconut butter
  • 1 Tbsp raw coconut oil

Ingredients – Santa Hat Pom Pom

  • 2 cups shredded coconut
  • 1 tsp agar agar
  • 2/3 cup coconut milk
  • 2 Tbsp boiling water

Method

Method – Crust

  1. Put all the crust ingredients into the Vitamix 2L container in the order listed and secure the lid.
  2. Select Variable 1. Turn the machine on and quickly increase the speed to 10, then override to High.
  3. Use tamper really well to press the ingredients into the blades.
  4. Blend for 45-60 seconds or until the ingredients are starting to hold together, forming a rough dough.
  5. Stop the machine and press the mixture into smalled lined cupcake tins. About a 50 cent piece in diameter. You don’t want to make them too big or your strawberry hats will look funny.
  6. Place into the fridge to set.

Method – Lemon Filling

  1. Place the agar agar into a bowl and dissolve with about 2 Tbsp of very hot filtered water. Once dissolved, let cool to room temperature.
  2. Put all the lemon filling ingredients into the Vitamix 2L container in the order listed and secure the lid.
  3. Select Variable 1. Turn the machine on and quickly increase the speed to 10, then override to High.
  4. Use tamper to press the ingredients into the blades if required.
  5. Blend for 30-60 seconds or until smooth and stop the machine
  6. Pour the Lemon filling onto the prepared crusts and then place back into the fridge to set for about an hour.
  7. Once set, garnish with strawberries to make the hat.

Method – Hat Pom Pom

  1. Place the agar agar into a bowl a small cup and dissolve with about 2 tbsp boiling water. Once dissolved, let cool to room temperature.
  2. Put all the Pom Pom ingredients into the Vitamix 2L container including the dissolved agar agar and secure the lid.
  3. Select Variable 1. Turn the machine on and quickly increase the speed to 10, then override to High.
  4. Use tamper to press the ingredients into the blades if required.
  5. Blend for 30-60 seconds or until smooth and stop the machine.
  6. Roll into little pom pom sized balls and save the rest for another recipe.
