Spicy Thai with Kaffir Lime & Coriander Dip Submitted by Fiona Kenna

Ingredients

  • 2 tomatoes (remove seeds & inside flesh, dice)
  • 50g red capsicum (dice)
  • 1/3 cup macadamia (unsalted)
  • 1 garlic clove (flatten with knife)
  • 4 single kaffir lime leaves (tear)
  • 2 coriander roots (chop)
  • 1/4 cup coriander leaves
  • juice of 1 lime
  • 1 tsp agave syrup
  • 1/2-1 long red chilli (slice)
  • pinch of curry powder
  • pinch of tumeric

Method

  1. Blend all ingredients starting with softer ingredients and liquids first.
  2. Adjust chilli according to personal taste. Great with crackers, breads or over raw spiralised zucchini pasta.
