Ingredients
- 2 tomatoes (remove seeds & inside flesh, dice)
- 50g red capsicum (dice)
- 1/3 cup macadamia (unsalted)
- 1 garlic clove (flatten with knife)
- 4 single kaffir lime leaves (tear)
- 2 coriander roots (chop)
- 1/4 cup coriander leaves
- juice of 1 lime
- 1 tsp agave syrup
- 1/2-1 long red chilli (slice)
- pinch of curry powder
- pinch of tumeric
Method
- Blend all ingredients starting with softer ingredients and liquids first.
- Adjust chilli according to personal taste. Great with crackers, breads or over raw spiralised zucchini pasta.
