Red Velvet Cupcakes

Red Velvet Cupcakes

Ingredients - Cakes

  • 2 medium beetroot (grated)
  • 1 ½ cup almond meal
  • 4 Tbsp raw cacao powder
  • 3 Tbsp coconut oil
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/3 cup rice malt syrup
  • 1 tsp baking powder
  • Pinch of Salt

Ingredients - Frosting

  • 1 block Philadelphia cream cheese
  • lemon (juice and zest)
  • 3 Tbsp rice malt syrup (to taste)
  • 2 Tbsp full cream milk (milk of choice)

Method - Cakes

  1. Add all ingredients to blender and blend until smooth.
  2. Divide mix into 12 patty cases or muffin tray and bake for 30-40 mins (170degrees) or until skewer comes out clean.

Method - Frosting

  1. Add all ingredients to blender until smooth.
  2. Pipe or spoon onto cupcakes and devour!
