Spicy Carrot Salad

Makes: large salad

Serves: 2-4

Spicy Carrot Salad

Ingredients

  • 4 cup carrot (shredded)
  • 1/3 cup raisins (chopped)
  • 1/3 cup cashews
  • 3 Tbsp lemon juice
  • 2 Tbsp mint (finely chopped)
  • 2 Tbsp flaxseed oil or olive oil
  • 1 tsp turmeric
  • 1/2 tsp cinnamon
  • 1/2 tsp coriander (ground)
  • 1/8 tsp cumin (ground)
  • 1/8 tsp yellow mustard
  • 1/8 tsp cardamom
  • dash of nutmeg and black pepper
  • 1/4 tsp sea salt to taste.

Optional

  • 1/8 tsp cayenne pepper

Method

  1. You can use the Vitamix to help chop your carrots up.
  2. Combine all ingredients in a large bowl and serve.
  3. This will last for three days in the refrigerator; however, like most things it tastes better fresh. You might like to squeeze some lime or lemon over it before serving.
