How to Make Salted Caramel & Banana Ice Cream using the Vitamix Blender
G’day, guys. How’s it doing? I’m Dan from Raw Blend. We’re going to show you an ice cream recipe today. This is one of the ice cream recipes we do a lot at the home shows, so a lot of people ask about it. It’s called salted caramel and banana ice cream.
I’m going to get started. We have the banana here and so just room temperature. I peeled it. On to the caramel, so there’s a lot of ways you can make caramel in your Vitamix. Basically you’re going to need some dates. There’s a lot of different caramel recipes, but they all have dates in them. That’s going to give us that nice caramel flavour. Some macadamia nuts, a handful of these. That’s going to help to emulsify it. It’s going to sort of glue it all together and make it nice and creamy for us.
To help this sweetness along a little bit, just got a dessert spoon of honey here and obviously we’ll need our salt so I’m using a good quality salt. I want to taste the salt, so I’m going to get plenty of it in there. That should be pretty good.
Now we need something to freeze it obviously. We’re going to use about two or three cups of ice, and I’m trying to get my ratios right here, So what we’re looking for is about one part liquid to three parts frozen. The liquid in this recipe is in the dates, it’s in the banana, and a little bit of that honey. The ice, that’s frozen. We could be using other things here. You don’t have to use ice. You could use some frozen milk, some frozen soy milk, even frozen coconut cream. There are a lot of ways you can get the same results.
I’m going to crank it up onto high speed. Blend it for about thirty seconds. I’ll do it as quick as I can, and I’ll see how it comes out. All right, there we go. Now, the trick with it is to not blend it for too long. The friction energy coming off that blade will actually heat that ice cream up if we run it too long. At the moment it’s all thick and frozen inside the container ready to serve up. We probably could’ve used a little bit more ice in that one. I usually like to just make it fresh. You can put a couple of little garnishes on here if you’re feeling creative, and that’s ready for your next dinner party.
