Watermelon Ice Cream

Makes: 750ml

Serves: 2-4

Watermelon Ice Cream

Rule = 1 part liquid to 3 parts frozen



  • 3/4 cup full fat coconut milk
  • 5 pitted medjool dates (soaked and drained)
  • 1/2 tsp vanilla paste
  • 2.5 cups watermelon (cubed and frozen) 


  1. Place the watermelon, coconut milk, dates and vanilla paste into your 2L Vitamix wet container and secure the lid.
  2. Select variable speed 1. Turn the machine on and quickly increase the speed to 10, then override to HIGH.
  3. Blend for 30-45 seconds or until desired consistency is reached.
  4. Serve straight away and garnish with whatever you feel like.
  5. Alternatively, you could use cold watermelon and blend until you have a smooth consistency and set it in the freezer over night.
