Coconut Carob Rough

One of our favourite all time raw slice recipes! It’s easy to make in the Vitamix & tastes just like how your local bakery makes them, except our version is much healthier!

Method

  1. Add the almonds to your Vitamix Dry Container and blend on HIGH speed until they turn into a find powder.

  2. Add the carob powder and salt and blend on HIGH speed until well combined.

  3. Transfer your flour mixture to your Vitamix Wet Container and add your dates. Blend on HIGH speed until well combined. Use your tamper effectively to push the ingredients down to the blade.

  4. Remove your dough mixture and add it to your two cups of desiccated coconut. Combine really well with your hands.

  5. Transfer this mixture to a square metal tin lined with baking paper and press down until it’s firmly packed. Place this in the freezer to set.

  6. Now for the Chewy Layer.

  7. Add all the topping layer to your Vitamix wet container and secure the lid.

  8. Turn your machine onto variable speed 1, and quickly increase to the highest speed.

  9. Use the tamper to effectively press the ingredients into the blades whilst processing.

  10. Blend for 30-45 seconds or until desired consistency is reached.

  11. Stop the machine. Take your base out of the freezer and pour your topping over your base.

  12. Place your complete slice into the freezer to set.

  13. Take the slice out of the freezer about half an hour before serving.

  14. Enjoy!

Good to know

  • This can be stored for up to a week in an airtight container in the fridge. I can put money on the fact that it won’t last that long.
