Vegan Christmas Pudding Bliss Balls Submitted by Tommy - Raw Blend

These Christmas Pudding Bliss Balls are sure to be a favourite at your festivities! They are fully vegan, and the perfect combination of fruity and creamy and hit all the right spots.

Ingredients

Bliss Balls

  • 1/2 cup walnuts
  • 1/2 cup pecans
  • 1/2 cup medjool dates (pitted)
  • 1/2 cup raisins
  • 1 Tbsp orange zest
  • 1 tsp cinnamon
  • 1 tsp nutmeg

Bliss Balls – Chunky

  • 1/4 cup cranberries
  • 1/4 cup crystalised ginger

Frosting

  • 1 cup raw cashews
  • 1/3 cup coconut cream
  • 2 Tbsp Maple Syrup
  • Sprinkle of lemon zest or 1 tsp of lemon juice
  • 1/4 tsp vanilla extract

Frosting (Spare)

  • 1/2 cup coconut cream

Method

Bliss Balls

  1. Put all the ingredients (except chunky ingredients) into the Vitamix container in the order listed and secure the lid.
  2. Select Variable 5 and pulse a few times.
  3. Select Variable 1. Turn the machine on and quickly increase the speed to High.
  4. Use the tamper to effectively press the ingredients into the blades whilst processing.
  5. Blend for 30 seconds or until desired consistency is reached, and stop the machine.
  6. Add in chunky ingredients and blend on speed 5 for about 5-10 seconds.
  7. Roll into balls, flatten the tops slightly for garnish, and cool in the freezer for 10 minutes.

Frosting

  1. Put all the ingredients (except spare ingredients) into the Vitamix container in the order listed and secure the lid.
  2. Turn the machine on and quickly increase the speed to 6.
  3. Use the tamper to effectively press the ingredients into the blades whilst processing.
  4. While blending, slowly add remainder of coconut cream.
  5. Blend for 60 seconds or until desired consistency is reached, and stop the machine.
  6. Take the bliss balls out of the freezer, and top with the frosting, dried cherries and pepita seeds.
