Ingredients
Bliss Balls
- 1/2 cup walnuts
- 1/2 cup pecans
- 1/2 cup medjool dates (pitted)
- 1/2 cup raisins
- 1 Tbsp orange zest
- 1 tsp cinnamon
- 1 tsp nutmeg
Bliss Balls – Chunky
- 1/4 cup cranberries
- 1/4 cup crystalised ginger
Frosting
- 1 cup raw cashews
- 1/3 cup coconut cream
- 2 Tbsp Maple Syrup
- Sprinkle of lemon zest or 1 tsp of lemon juice
- 1/4 tsp vanilla extract
Frosting (Spare)
- 1/2 cup coconut cream
Method
Bliss Balls
- Put all the ingredients (except chunky ingredients) into the Vitamix container in the order listed and secure the lid.
- Select Variable 5 and pulse a few times.
- Select Variable 1. Turn the machine on and quickly increase the speed to High.
- Use the tamper to effectively press the ingredients into the blades whilst processing.
- Blend for 30 seconds or until desired consistency is reached, and stop the machine.
- Add in chunky ingredients and blend on speed 5 for about 5-10 seconds.
- Roll into balls, flatten the tops slightly for garnish, and cool in the freezer for 10 minutes.
Frosting
- Put all the ingredients (except spare ingredients) into the Vitamix container in the order listed and secure the lid.
- Turn the machine on and quickly increase the speed to 6.
- Use the tamper to effectively press the ingredients into the blades whilst processing.
- While blending, slowly add remainder of coconut cream.
- Blend for 60 seconds or until desired consistency is reached, and stop the machine.
- Take the bliss balls out of the freezer, and top with the frosting, dried cherries and pepita seeds.
