Ingredients – Base
- 1 cup almonds
- 5-6 dates (adding 1 at a time to get a firm sticky consistency)
Ingredients – Filling
- 2 large ripe avocados
- 30g raw cacao
- 4 dates
- 1 Tbsp shredded coconut
- 2 tsp coconut oil
Ingredients – Top
- chopped walnuts
- Place base ingredients in Vitamix blender and blend until combined.
- Press into base of 2 small springform pans.
- Place filling ingredients in Vitamix blender.
- Start on 1, then increase to10, then to high.
- Blend for about 30 sec until smooth.
- Pour onto base of the 2 bases.
- Refrigerate over night.
- When serving, place fresh berries on top and chopped walnuts.
- Wipe around edges of springform pan with warm cloth to release.
- Can also sprinkle coconut on base pan so base doesn’t stick.
- Only use 2 small springform pans or place into 2 cups to serve.
