Tommy’s Berry Sage Sorbet recipe is a nutritious and refreshing blend of fresh ingredients with some flavoursome herbs to create the perfect satisfying sorbet for spring and summertime.

Ingredients
- 1 cup of coconut yoghurt (natural flavour)
- 1/2 banana (peeled)
- 2 medjool dates (pitted)
- 3 cups of frozen berries (I used mixed)
- 5-10 leaves of sage (to taste)
Method
- Put all the ingredients into the Vitamix container in the order listed and secure the lid.
- Select speed 1, turn the machine on and quickly increase to high speed.
- Use the tamper to effectively press the ingredients into the blades whilst processing.
- Blend for 30-45 seconds or until desired consistency is reached.
- Stop the machine and serve.
Notes
- Do not over-mix or the Ice Cream will begin to melt.
- Ice Cream Rule = 1-part liquid or soft ingredients to 3 parts frozen ingredients.
- If using an Ascent model, use the ice cream setting.
