Choc Beet Cake

A chocolate cake recipe with a twist… the addition of earthy and nutritious beetroot! Definitely give this recipe a go, it only take about an hour to make in your Vitamix Blender.

Ingredients

Dry Ingredients

  • 2 cups shredded coconut
  • 2 cups cashew nut flour

Wet Cake Mixture Ingredients

  • 2 medium beetroot (skinned and shredded)
  • 1/2 cup rice malt syrup
  • 2 dates
  • 3 eggs (see notes for vegan alternatives)
  • 1 tsp vanilla paste
  • 2 Tbsp chia seeds
  • 1/2 tsp baking powder
  • 1/2 cup cacao powder

Method

Dry Ingredients

  1. Put all the ingredients into a large mixing bowl.
  2. Combine ingredients and set aside.

Wet Cake Mixture Ingredients

  1. Preheat oven to 180C
  2. Put all the ingredients into the Vitamix container in the order listed and secure the lid.
  3. Select speed 1, turn the machine on and quickly increase to the highest speed.
  4. Use the tamper to effectively press the ingredients into the blades whilst processing.
  5. Blend for 45 seconds or until desired consistency is reached.
  6. Pour into mixing bowl with dry ingredients and combine.
  7. Pour into cake pan and bake in the oven for 30 minutes.

Notes

Suggestions for vegan alternatives to egg!

  • 2 Tbsp arrowroot power = 1 egg
  • 1 Tbsp chia or flax seed soaked in 3 Tbsp water = 1 egg
