Gluten & Dairy Free Flourless Brownies Submitted by Carly Hicks - Competition Entry

Here is my Gluten Free, Dairy Free, and Flourless Brownies. They are high in Fibre, Omega 3,6 and 9, and contain hidden vegetables. Super easy to make!

Ingredients

  • 3/4 cup cooked and drained black beans
  • 1 egg
  • 1/4 cup cacao
  • 1/2 cup rice syrup
  • 1/2 cup almond spread
  • 1/2 tsp bicarb soda
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • dash Himalayan salt
  • 1 block Loving Earth salted caramel or Dark Chocolate (if you like it less sweet)
  • 1 zucchini grated

Method

  1. Add beans, salt and egg to food processor or blender and pulse for 30 seconds. Add the mixture to a mixing bowl and add almond spread, bicarb, cacao and mix well.
  2. Then add the rest of the ingredients and mix till it forms a paste.
  3. Line a bread tin with baking paper and pour the mixture into the baking tin, and cook in the oven on 180 degrees for 45-50mins.
