Green Chilli & Coriander Dip

This Green Chilli & Coriander Dip is sure to wow your guests. It packs a real flavour and spice punch, and it’s also raw and vegan friendly. Easily made in the Vitamix in only minutes.

Ingredients

  • 1 avocado (peeled and pitted)
  • 1 handful macadamia nuts
  • 1 good handful fresh coriander
  • 1 clove garlic
  • 1 lime (juice only)
  • 1 handful baby spinach
  • 1 jalapeño with seeds
  • good crack salt and pepper

Method

  1. Put all the ingredients into the Vitamix container in the order listed and secure the lid.
  2. Select speed 1, turn the machine on and increase to speed 2.
  3. Use tamper to effectively press the ingredients into the blades whilst processing.
  4. Blend for 20-40 seconds or until desired temperature is reached.
  5. Stop the machine and serve.

Notes

  • Make sure the nuts that you’re buying are gluten free.
