Healthy Carrot Cake Submitted by Claire Walters - Raw Blend

Carrot Cake is a favourite dessert in many households so make sure you give our Healthy Carrot Cake a go. It’s made from real foods, no preservatives, it tastes delicious & is super easy to make in your Vitamix.

Ingredients

  • 4 cups carrot (grated)
  • 1/4 cup cashews
  • 1/4 cup pistachios
  • 5 Tbsp grass-fed organic ghee (melted)
  • 2 cups almond flour (made in dry container)
  • 1 tsp cinnamon powder
  • 1 tsp baking soda
  • 1 tsp cardamom pods (freshly ground)
  • 3 eggs (whisked)
  • 2 Tbsp organic raw honey (melted)

Method

  1. Pulse the cashews and pistachios in the Vitamix Dry Container until roughly chopped.
  2. Add carrot, cashews, pistachios and ghee into bowl. Mix Well.
  3. In another bowl, add almond flour, baking soda, cardamom and cinnamon and stir until well combined.
  4. Add the carrot mixture to the bowl and combine well. Mix in honey and eggs.
  5. Pour into a prepared cake tin and bake for around 30 minutes on 180 degrees Celsius (fan forced).
  6. Cool cake on a cooling rack and ice with your icing of choice.
