Macadamia Bliss Bites

These delicious Macadamia Bliss Bites are vegan, easily made in the Vitamix and the perfect sweet snack for when your cravings suddenly hit!

Ingredients

  • 1 cup Medjool dates (pitted, soaked for 24hours)
  • 1 cup macadamia nuts or mixed nuts of your choice
  • 1 Tbsp shredded coconut
  • 2 Tbsp cacao butter
  • 2 Tbsp tahini
  • 1 tsp vanilla paste
  • 1 pinch sea salt

Method

  1. Place all your ingredients into your Vitamix container and secure the lid.
  2. Turn to high speed and pulse the machine on and off for 2 seconds at a time, about 4 times. This helps chop up and gets your mixture moving. Make sure you are holding the container whilst pulsing so it doesn’t jump off your motor base.
  3. Blend on high speed whilst using your tamper to effectively push the ingredients down to the blade.
  4. Stop blending once you have formed a dough consistency.
  5. Roll your macadamia balls in some fine desiccated coconut and set in the freezer for about 3 hours.
  6. When you are ready to serve, thaw them out for about 5 minutes before eating.
  7. Enjoy!

Notes

  • Make sure to always check that the nuts that you are buying are gluten free.
