These delicious Macadamia Bliss Bites are vegan, easily made in the Vitamix and the perfect sweet snack for when your cravings suddenly hit!

Ingredients
- 1 cup Medjool dates (pitted, soaked for 24hours)
- 1 cup macadamia nuts or mixed nuts of your choice
- 1 Tbsp shredded coconut
- 2 Tbsp cacao butter
- 2 Tbsp tahini
- 1 tsp vanilla paste
- 1 pinch sea salt
Method
- Place all your ingredients into your Vitamix container and secure the lid.
- Turn to high speed and pulse the machine on and off for 2 seconds at a time, about 4 times. This helps chop up and gets your mixture moving. Make sure you are holding the container whilst pulsing so it doesn’t jump off your motor base.
- Blend on high speed whilst using your tamper to effectively push the ingredients down to the blade.
- Stop blending once you have formed a dough consistency.
- Roll your macadamia balls in some fine desiccated coconut and set in the freezer for about 3 hours.
- When you are ready to serve, thaw them out for about 5 minutes before eating.

Notes
- Make sure to always check that the nuts that you are buying are gluten free.
