Tommy’s latest creation is this delicious Mediterranean Vegan Pesto and contains fresh ingredients, good fats, and delicious flavour. It is the perfect recipe to put on crackers, pizza or over pasta.
- 1/2 cup extra virgin olive oil
- 2 cloves garlic
- 1/2 cup pine nuts (raw or toasted)
- 3 Tbsp marinated artichoke hearts
- 2 Tbsp olives
- 2 Tbsp caper berries
- 1 cup packed basil
- 1/2 cup Italian parsley
- 1/2 cup baby spinach
- 1 Tbsp lime juice
- 3 Tbsp nutritional yeast
- 1 tsp salt and pepper (to taste)
- Put all the ingredients into the Vitamix container in the order listed and secure the lid.
- Select speed 1, turn the machine on and quickly increase to speed 3-5.
- Use the tamper to effectively press the ingredients into the blades whilst processing.
- Blend for 20 seconds or until desired consistency is reached.
- Stop the machine and serve.
