Mediterranean Vegan Pesto Submitted by Tommy - Raw Blend

Tommy’s latest creation is this delicious Mediterranean Vegan Pesto and contains fresh ingredients, good fats, and delicious flavour. It is the perfect recipe to put on crackers, pizza or over pasta.


  • 1/2 cup extra virgin olive oil
  • 2 cloves garlic
  • 1/2 cup pine nuts (raw or toasted)
  • 3 Tbsp marinated artichoke hearts
  • 2 Tbsp olives
  • 2 Tbsp caper berries
  • 1 cup packed basil
  • 1/2 cup Italian parsley
  • 1/2 cup baby spinach
  • 1 Tbsp lime juice
  • 3 Tbsp nutritional yeast
  • 1 tsp salt and pepper (to taste)


  1. Put all the ingredients into the Vitamix container in the order listed and secure the lid.
  2. Select speed 1, turn the machine on and quickly increase to speed 3-5.
  3. Use the tamper to effectively press the ingredients into the blades whilst processing.
  4. Blend for 20 seconds or until desired consistency is reached.
  5. Stop the machine and serve.

    Not the traditional Pesto recipe however, this is a fantastic Vegan alternative! I love this recipe. Will be making this a lot more from now on.
