Paleo Choc Peppermint Cupcakes Submitted by The Merrymaker Sisters

Try this delicious Paleo Cupcake Recipe. Even if you’re not following a Paleo diet, give this recipe a go. It’s easy, delicious and very good for you!


Ingredients – Cupcakes

  • 8 eggs
  • 1/2 cup of coconut flour
  • 1/2 cup of raw cacao powder
  • 1/2 cup of coconut oil (melted)
  • 4 Tbsp natvia (powdered stevia)
  • 2 drops peppermint essence.

Ingredients – Frosting

  • 2 avocados (seeds removed)
  • 200g dates (pitted and soaked in boiling water – max 10 mins)
  • 2 Tbsp natvia
  • 1/4 cup raw cacao powder


Method – Cupcakes

  1. Preheat oven to 180 degrees Celsius. Line a 12 muffin tray with cute cupcake cases.
  2. In your Vitamix, whiz the eggs until they change pale in colour (level 5, 30 seconds).
  3. Add the coconut flour and whiz again (level 6, 30 seconds).
  4. Add the raw cacao powder (level 8, 30 seconds).
  5. Add the melted coconut oil, natvia and peppermint essence and whiz in your Vitamix for one minute, level 8
  6. Pour in even amounts of mixture into the 12 cupcake cases.
  7. Place into the oven for 15 minutes (test with a skewer, it should come out clean).
  8. Allow to cool before icing.

Method – Frosting

  1. Place the flesh of the avocados into your Vitamix and whiz until pureed.
  2. Drain the dates and add them to the avocado, whiz again until the dates have broken down.
  3. Add natvia and raw cacao and mix until combined.
  4. Pipe or spread frosting onto cooled cupcakes and decorate with desired toppings (we used toasted coconut and cacao nibs).
