Raspberry Coconut Sorbet Submitted by Dan Churchill

In light of recently experiencing the hottest October day on record I thought I would take the opportunity to test out a healthy refreshing sorbet recipe. Best thing is it takes 3 minutes and you have a delicious ice cold summer dish that is sure to keep you cool, no matter what the heat.

Ingredients

  • 1 ½ cup raspberries (frozen)
  • 1/2 cup coconut milk
  • 1 Tbsp honey

Optional

  • 1/4 cup cacao nibs

Method

  1. In this order add the Raspberries, Cacao Nibs, Honey, Coconut Milk to your Vitamix.
  2. Turn Vitamix onto 3 and allow mix to combine which should take no longer than 90 seconds.
  3. You can use the tamper to ensure everything combines. Store in the freezer for up to 2 weeks.
