Raw Anzac Biscuit Inspired Truffles Submitted by Claire Walters - Raw Blend

Ingredients

  • 2/3 cup almonds (blanched or raw)
  • 1/3 cup rolled oats
  • 1/3 cup sesame seeds
  • 1/3 cup shredded coconut
  • 2 Tbsp white chia seeds
  • pinch Himalayan salt
  • 1/3 cup maple syrup or coconut nectar (tastes more traditional with maple syrup)
  • 2 tsp vanilla extract
  • 1-2 Tbsp water
  • 1 cup shredded coconut (for rolling in)

Method

  1. Place the almonds, oats, sesame seeds, coconut, chia seeds and salt in your Vitamix wet container and secure the lid.
  2. Select high speed and pulse the machine on and off 5 times for 3 seconds each time. This will create your “flour.”
  3. Combine the maple syrup, vanilla extract and water in a cup and mix well.
  4. Pour your liquid mixture into the Vitamix wet container with your flour mixture.
  5. Select speed 1, turn the machine on and quickly increase to high speed.
  6. Use the tamper to effectively press the ingredients into the blades whilst processing.
  7. Blend until you have a nice dough.
  8. Place the extra shredded coconut into a bowl.
  9. Roll the balls in the shredded coconut to coat and place on a plate lined with grease proof paper. This is easy to do if you have damp hands as the dough won’t stick to you.
  10. Set the truffles in the freezer for about an hour and take out just before serving.
  11. The truffles with last for about a week when stored in an airtight container in the fridge.
