Ingredients
Ingredients – Cupcakes
- 250g walnuts
- 1 Tbsp cacao powder
- 1/2 tsp cinnamon powder
- 1 pinch sea salt
- 8 large fresh dates (pitted)
- 1/2 tsp vanilla paste
Ingredients – Frosting
- 2 Tbsp raw coconut nectar (more if you like it sweeter)
- 1 ripe avocado
- 1/2 tsp vanilla paste
- 2 Tbsp cacao powder
Method
Method – Cupcakes
- Put all the Cupcake ingredients into the Vitamix container in the order listed and secure the lid.
- Select speed 1. Turn the machine on and quickly increase to high speed.
- Use tamper effectively to press the ingredients into the blades. The batter should begin to come together when pressed.
- Stop the machine and scoop out the batter into small portions and arrange on a tray.
- Place in the fridge for at least 2 hours to chill and set. No baking required.
Method – Icing
- Put all the Icing ingredients into the Vitamix container in the order listed and secure the lid.
- Select speed 1, turn the machine on and quickly increase to high speed.
- Use tamper effectively to press the ingredients into the blades until the mixture is creamy and thick.
- Stop the machine and decorate whichever way you like! Add some cacao nibs, flaked coconut or some goji berries.
- Refrigerate until you are ready to serve!
