Raw Chocolate Cupcakes Submitted by Claire Walters - Raw Blend

Ingredients

Ingredients – Cupcakes

  • 250g walnuts
  • 1 Tbsp cacao powder
  • 1/2 tsp cinnamon powder
  • 1 pinch sea salt
  • 8 large fresh dates (pitted)
  • 1/2 tsp vanilla paste

Ingredients – Frosting

  • 2 Tbsp raw coconut nectar (more if you like it sweeter)
  • 1 ripe avocado
  • 1/2 tsp vanilla paste
  • 2 Tbsp cacao powder

Method

Method – Cupcakes

  1. Put all the Cupcake ingredients into the Vitamix container in the order listed and secure the lid.
  2. Select speed 1. Turn the machine on and quickly increase to high speed.
  3. Use tamper effectively to press the ingredients into the blades. The batter should begin to come together when pressed.
  4. Stop the machine and scoop out the batter into small portions and arrange on a tray.
  5. Place in the fridge for at least 2 hours to chill and set. No baking required.

Method – Icing

  1. Put all the Icing ingredients into the Vitamix container in the order listed and secure the lid.
  2. Select speed 1, turn the machine on and quickly increase to high speed.
  3. Use tamper effectively to press the ingredients into the blades until the mixture is creamy and thick.
  4. Stop the machine and decorate whichever way you like! Add some cacao nibs, flaked coconut or some goji berries.
  5. Refrigerate until you are ready to serve!
