Raw Coconut Cream Pie Submitted by Claire Walters - Raw Blend

Ingredients

For the Crust

  • 2 ¼ cup shredded organic coconut (dried)
  • 1/3 cup coconut oil (melted)
  • 2 medjool dates (pitted)
  • 1 Tbsp maple syrup (make sure it is 100% maple syrup)
  • 1 Tbsp vanilla paste
  • 2 cup kiwi fruit* to line the crust (finely diced)

*you could use any fruit: strawberries, peaches etc.

For the Filling

  • 2 cups young coconut meat (approx. 2 coconuts opened and scooped)
  • 1/2 cup cucumber (peeled, diced)
  • 1/2 cup cashews (soaked 30 minutes and drained)
  • 1/3 cup coconut oil (melted)
  • 1 ¼ cup coconut water
  • 1 ½ tsp vanilla paste
  • 2 Tbsp maple syrup or more to taste
  • 1 Tbsp vanilla paste
  • Berries for decoration

Method

For the Crust

  1. Put all the ingredients into the Vitamix container in the order listed and secure the lid.
  2. Select speed 1, turn the machine on and quickly increase to high speed.
  3. Use the tamper effectively to press the ingredients into the blade.
  4. Finish blending when it forms a sticky, bread crumb consistency.
  5. Scoop the crust mixture into a pie plate, ours was 12” with a removable base.
  6. With a spoon, gently press the mixture evenly around the pan. It will only come up the sides a little bit. Make sure that it is spread out evenly and there are no holes in the crust.
  7. Chill for 30-60 minutes. Spread diced kiwi fruit or fruit of choice along the crust before pouring in the filling.

For the Filling

  1. Place all the ingredients into your Vitamix container, except for your berries for decoration, and secure the lid.
  2. Turn your machine onto speed 1 and then immediately up to high speed.
  3. Use the tamper effectively to push the ingredients  into the blade.
  4. Finish blending when it forms a nice smooth but thick consistency, the tamper will help any ingredients that stick to the side.
  5. Pour the ingredients over the crust lined with kiwi fruit and chill for 4 hours or overnight.
  6. Shortly before serving decorate your pie with your fruits of choice.

Notes

  • Make sure to check that the nuts that you are buying are gluten free.
