These Raw Peanut Butter Cups are perfect to make as treats for yourself and the family. All natural ingredients and super simple to make in your Vitamix Blender.

Ingredients
Chocolate Mix
- 3-4 Tbsp raw cacao butter
- 3 Tbsp raw cacao powder
- 1 Tbsp coconut oil
- 1 Tbsp coconut nectar
Biscuit Base
- 1/2 cup ground almonds
- 1/2 cup shredded coconut
- 3 Tbsp coconut oil (melted)
- 1 Tbsp coconut nectar
Peanut Filling
- 1 cup peanuts
- 1 tsp pink Himalayan salt (Or sea salt)
- 3 Tbsp coconut nectar
- 2 Tbsp coconut oil (melted)
Garnish
- chopped peanuts to finish
Method
- Melt all Chocolate Mix ingredients in a double boiler, making sure it is well mixed before you pour the mix into silicone cupcake moulds.
- Place the moulds on a tray in the freezer.
- Place all Biscuit Base ingredients in your Vitamix & blend.
- Scoop out and set aside in separate bowl.
- Place all Peanut Filling ingredients in Vitamix and blend until desired consistency- longer for smoother peanut butter.
- Scoop out and set aside.
- Take moulds out of the freezer & scoop 2 tsp of the biscuit mix into the moulds on top of the chocolate, pressing down firmly.
- Repeat the same process with the Peanut Mix & then pour remaining melted chocolate over the top of the peanut butter layer.
- Sprinkle with chopped peanuts then place back into freezer for 20-30 minutes until chocolate is set.
- Remove from freezer and take cups out of their moulds by pushing upwards underneath moulds.
- Sprinkle with more pink/sea salt and let sit for 10 minutes before consuming.
- Peanut butter and chocolate, sweet and salty – the best of both worlds!
