Ingredients
- 2 cups dried shredded coconut
- 1/2 cup tahini
- 1/2 cup raw coconut nectar
- 1/2 cup coconut oil
- 1 tsp pure vanilla extract (or 1 vanilla bean)
- 1 pinch ground cinnamon
- 1/2 tsp Himalayan sea salt
Method
- Add all ingredients into large bowl except the shredded coconut.
- Stir with spoon until well mixed.
- Once combined, add shredded coconut. Stir again until well combined.
- Drop cookies onto a cookie sheet. Cover and freeze for at least 30 minutes.
- Store leftover raw vanilla drop cookies in freezer. They should keep in the freezer for about 2 weeks.
