Sour Cream Three Ways Submitted by Claire Walters - Raw Blend

Sour Cream is always a winner in the kitchen however it can be fattening. We’ve made it healthy and in 3 different ways to suit most dietary requirements, and all simply made in the Vitamix.

Ingredients

Healthy Sour Cream – Makes 1 cup

  • 1 cup cottage cheese
  • 1 Tbsp apple cider vinegar

Vegan Sour Cream – Makes 1 ½ Cups

  • 1 cup Brazil nuts (soaked)
  • 2 Tbsp apple cider vinegar
  • 1/2 cup filtered water
  • 3/4 tsp Himalayan sea salt

Dairy Free Sour Cream – Makes 2 cups

  • 1 cup filtered water
  • 1 tsp Himalayan sea salt
  • 1/2 cup pine nuts
  • 1/2 cup sunflower seeds
  • 1/3 cup lemon juice (freshly squeezed)
  • 1 tsp garlic powder or 1/2 garlic clove
  • 1 tsp onion powder
  • 1 Tbsp apple cider vinegar

Method

Healthy Sour Cream Recipe

  1. Mix ingredients together in a bowl really well.
  2. Can be kept in airtight container stored in the fridge for a few days.

Vegan Sour Cream

  1. Mix ingredients together in a bowl really well.

Dairy Free Sour Cream

  1. Put all the ingredients into the Vitamix container in the order listed and secure the lid.
  2. Select speed 1, turn the machine on and quickly increase to the highest speed.
  3. Use the tamper to effectively press the ingredients into the blades whilst processing.
  4. Blend for 45-60 seconds or until desired consistency is reached.
  5. Stop the machine and serve.
  6. Can be kept in an airtight container stored in the fridge for a few days.
