Spicy Carrot Salad Submitted by Claire Walters - Raw Blend

Ingredients

  • 4 cups carrot (shredded)
  • 1/3 cup raisins (chopped)
  • 1/3 cup cashews
  • 3 Tbsp lemon juice
  • 2 Tbsp mint (finely chopped)
  • 2 Tbsp flaxseed oil or olive oil
  • 1 tsp turmeric
  • 1/2 tsp cinnamon
  • 1/2 tsp coriander (ground)
  • 1/8 tsp cumin (ground)
  • 1/8 tsp yellow mustard
  • 1/8 tsp cardamom
  • dash of nutmeg and black pepper
  • 1/4 tsp sea salt to taste
  • parsley to garnish

Optional

  • 1/8 tsp cayenne pepper

Method

  1. Combine all ingredients in a large bowl and serve.
  2. This salad will last for three days in the refrigerator, however, like most things it tastes better fresh. You might like to squeeze some lime or lemon over it before serving.
