This easy-to-make salsa has the perfect flavour combination using fresh and flavoursome ingredients for an all round sweet, sour, spicy and salty kick. Enjoy the taste of spring while reaping the nutritional benefits of this delightful salsa.


  • 2 cups mixed cherry tomatos
  • 1 cup mixed olives (pitted)
  • 1/2 red capsicum (chopped)
  • 2 Tbsp spring onion (chopped)
  • 1 tsp minced garlic
  • 1 Tbsp tomato paste
  • 1/2 lime (juice)
  • small handful dill
  • small handful coriander
  • 1 tsp Italian herbs
  • salt and pepper (to taste)


  • 1 jalapeno (seedless)
  • 1 Tbsp capers


  1. Put all the ingredients into the Vitamix container in the order listed and secure the lid.
  2. Select speed 1, turn the machine on and increase to speed 2.
  3. Use the tamper to effectively press the ingredients into the blades if required whilst processing.
  4. Blend for 10-20 seconds or until chopped consistency is reached.
  5. Stop the machine and serve.
