Strawberry Brownies Submitted by Claire Walters - Raw Blend

Who doesn’t love Brownies? Just because you enjoy a Raw Food based diet doesn’t mean you can’t enjoy a sweet treat. Try our raw Strawberry Brownies recipe it’s simply bursting with flavour!

Ingredients

Brownie Base

  • 2/3 cup almonds
  • 2/3 cup chopped Medjool dates (pitted)
  • 1 ½ Tbsp cacao powder
  • 1/4 tsp vanilla paste
  • 1 ½ Tbsp cacao paste (cacao butter and cacao powder mixed together to form a paste)
  • a pinch of Himalayan sea salt

Strawberry Cream

  • 1 cup strawberries
  • 1/3 cup cashews or macadamia nuts
  • 2 Tbsp shredded coconut (dried)
  • 3 Tbsp maple syrup or raw honey
  • 1/2 tsp lemon juice
  • 4 Tbsp coconut oil or cacao butter (melted)

Chocolate Drizzle

  • 2 Tbsp maple syrup or raw honey
  • 1 Tbsp almond butter
  • 1 ½ Tbsp cacao powder
  • 1 Tbsp coconut oil (melted)

Method

Brownie Base

  1. Place the almonds into your Vitamix wet container.
  2. Turn the dial to speed 10 and pulse the machine on and off 6 times until you have rough flour forming.
  3. Add the dates, cacao powder and vanilla and turn machine onto HIGH speed and use your tamper really well to push the ingredients down to the blade. Process until a nice pliable dough forms.
  4. Add the melted cacao paste and process on HIGH speed using your tamper effectively to incorporate.
  5. Press the dough into a lined pan making sure that it is evenly spread.
  6. Place in the fridge to set for 1 hour.

Strawberry Cream

  1. Put all the ingredients into the Vitamix container in the order listed for Strawberry Cream and secure the lid.
  2. Select speed 1, turn the machine on and quickly increase to high speed.
  3. Use tamper effectively to press the ingredients into the blades.
  4. Blend until smooth and pour the strawberry cream over the brownie base.
  5. Set in the freezer for about 3 hours.

Chocolate Drizzle

  1. Sift the cacao powder into a bowl and add all the remaining ingredients and whisk to combine.
  2. The mixture should be really smooth.
  3. If not, set it over a bowl of boiling water while whisking.
  4. Drizzle over your brownie and garnish with whatever you feel.
