This is my spin on a traditional Tom Yum Soup. It’s packed with good nutrition and flavour, is super easy to make in your Vitamix blender, and it’s also vegan friendly!

Ingredients
- 2 cups filtered water
- 2 tomatos
- 1 carrot
- 1/2 red capsicum
- 1 stick celery
- 1 stick spring onion
- 1/4 apple
- 1 small slice lemon
- 1 fingertip fresh ginger root (with peel)
- 1 clove garlic
- 1/3 small birds eye chilli
- 3 handfuls cashews
- 1 large handful cabbage
- 1 small handful coriander
- 1 tsp Massel stock cube
Method
- Put all the ingredients into the Vitamix container in the order listed and secure the lid.
- Select speed 1, turn the machine on and quickly increase to the highest speed.
- Use tamper to effectively press the ingredients into the blades if required whilst processing.
- Blend for 5-6 minutes or until desired temperature is reached.
- Stop the machine and serve.

This was so dang good! I used lime instead of lemon and I probably should have omitted the peel as I could taste a little bit of bitterness … lesson learned. I didn’t have a Thai chile so I substituted a jalapeño, which worked well. And instead of regular cabbage I used savoy cabbage … again, it worked well. Finally, I had very few raw cashews, but I had some raw pistachios and almonds, so the mix of nuts went in and seemed to work okay, too. Come to think of it, it sounds like I didn’t follow the recipe much at all! 🙂
