Vanilla Bean & Pistachio Ice Cream Submitted by Raw Blend

This Vanilla Bean & Pistachio Ice Cream is so creamy and delicious. It only take minutes to make in the Vitamix & you can sub out the raw honey to make it vegan-friendly.

Ingredients

  • 6-8 cup Medjool dates (pitted and soaked)
  • 1/4 cup handful of pistachios (shelled and husks removed)
  • 1/2 banana (peeled)
  • 1 vanilla bean scraped or tsp vanilla essence
  • 2 Tbsp raw honey
  • 3-4 cups of ice

Caramel Sauce (optional)

  • 10-12 Medjool dates (pitted)
  • 3/4 cup water
  • pinch of pink rock salt
  • 1 vanilla bean scraped

Method

  1. Put all the ingredients into the Vitamix container in the order listed and secure the lid.
  2. Select speed 1, turn the machine on and quickly increase to the highest speed.
  3. Use tamper to effectively press the ingredients into the blades if required whilst processing.
  4. Blend for 35-40 seconds or until desired consistency is reached.
  5. Stop the machine and serve.

Caramel Sauce

  1. Put all the ingredients into the Vitamix container in the order listed and secure the lid.
  2. Select speed 1, turn the machine on and quickly increase to the highest speed.
  3. Use the tamper to effectively press the ingredients into the blades whilst processing.
  4. Blend until smooth creamy consistency
  5. Drizzle on the inside of your ice-cream cone or your ice-cream bowl, fill with ice-cream and then garnish with roughly chopped pistachio’s to add a little texture!

    This was the best non diary icecream. Amazing ingredients…..who would have thought. You simply have to make this!!!!! Highly recommended!!!!
