Ingredients
Raspberry Chia Jam
- 1 cup raspberries
- 2 Tbsp chia seeds
- 1 Tbsp rice malt syrup
Marshmallow
- 1/2 cup soaked cashews
- 1/2 cup dried coconut
- 1/2 tsp vanilla paste
- 1/3 cup almond milk
- 3 Tbsp coconut oil
- 2 Tbsp rice malt syrup
Biscuit
- 1/2 cup buckwheat
- 1/4 cup almond meal
- 1/2 cup oats
- 10-12 Medjool dates
Raw Chocolate
- 1/2 cup coconut oil melted
- 1/2 cup cacao
- 1/4 cup maple syrup
Method
Raspberry Chia Jam
- Combine all ingredients in a bowl with a fork. If you are using frozen raspberries make sure you let them defrost for about 30 minutes before hand.
- Set aside in the fridge.
Marshmallow
- Add all ingredients to your Vitamix container and secure the lid.
- Start speed 1, then quickly turn up to high speed.
- Use your tamper effectively to push all ingredients down to the blade.
- Blend until smooth.
- Transfer to a bowl and let it thicken in the fridge.
Biscuit
- Add all ingredients to your Vitamix container and secure the lid.
- Start on speed 1 then quickly turn up to high speed.
- Use your tamper effectively to push all ingredients down to the blade.
- Blend until you have a mouldable dough.
- Roll the mixture between two sheets of baking paper and cut out circle shapes and set in the freezer for about 20 minutes.
Raw Chocolate
- Add all ingredients to your Vitamix container and secure the lid.
- Start on speed 1 then quickly turn up to high speed.
- Use your tamper effectively to push all ingredients down to the blade.
- Blend until smooth and transfer to a large bowl.
Assembly
- Add your marshmallow mixture to a piping bag and pipe onto one side of the biscuit only leaving a well in the centre.
- Add the chia jam to the centre.
- Add the other side of the biscuit and sandwich together gently.
- Dip in chocolate and once you have done this too all of them set them in the freezer for about half an hour.
