Vegan Peanut Butter Cookies Submitted by Raw Blend

Try these delicious vegan and gluten-free Peanut Butter Cookies, perfect for a guilt-free treat! So easy to make!

Ingredients

Cookie

  • 1/2 vegan butter
  • 3/4 coconut sugar
  • 2 scoops vegan protein powder
  • 1/2 cup crunchy peanut butter
  • 1 1/2 cup Gluten-Free All Purpose flour
  • 1 tsp baking soda
  • pinch salt
  • 1/2 cup maple syrup
  • 1 tsp vanilla essence

Chocolate Topping

  • vegan chocolate chips
  • 1 Tbsp coconut oil
  • crushed peanuts (optional)

Method

  1. In your Vitamix blend together vegan butter, coconut sugar, peanut butter, vanilla extract and maple syrup until the mixture is light and fluffy.
  2. In a seperate mixing bowl combine all dry ingredients. Add wet ingredients to your mixing bowl and combine well to form a dough. I like to use my hands, though it can get a little messy.
  3. Wrap the dough in plastic wrap and set aside in the fridge to chill for 1 hour.
  4. Preheat oven to 375 degrees and remove dough from fridge. Roll round cookies and place on a parchment lined baking sheet. Using a fork, gently flatten your cookies in a criss-cross pattern.
  5. Bake cookies for 10 minutes or until lightly brown. Remove from the oven and set aside to cool completely.
  6. Melt your topping ingredients on the stove top or in the microwave.
  7. Dip completely cooled cookies half way into your melted chocolate mix, sprinkle with crushed peanuts and place back on the parchment paper to set.
