Sweet & Tipsy Coconut Slice Submitted by Raw Blend

Ingredients

Ingredients – Base

  • 1 cup macadamias
  • 1 cup cashew nuts
  • 6 figs (dried)
  • 1 cup pineapple (dried)

Ingredients – Filling

  • 2 young coconuts (flesh and water)
  • 4 Tbsp agar agar
  • agave or coconut palm sugar to sweeten (as much or as little as you like)
  • coconut flakes

Optional Sauce- Tequila Drizzle

  • 1/2 cup water
  • squeeze of agave or honey
  • fresh mint
  • Dash of Tequila

Method

Method – Base

  1. Mix all the base ingredients in a bowl and then process in three lots in the Vitamix Dry container.
  2. Once all the ingredients have formed a crumb-like texture, press it into the bottom of a Fluted Frech Tart Pan to form your base.

Method – Filling

  1. Blend the coconut flesh, water and sugar in your Vitamix wet container until it forms a smooth consistency. Then, on a low speed, mix in the Agar Agar to set the mixture.
  2. Pour the filling into the base and decorate with the fruit of your choice and some unsweetened coconut flakes.

Method – Tequila Drizzle

  1. Reduce these ingredients for about 5 minutes and just towards the end add some tequila.
  2. As this mixture is cooling add some fresh Lime juice.
  3. Drizzle on top of your slice and enjoy! 🙂

Notes

  • You might also like to put some freshly made cashew cream over the top. The options are endless.
