This Creamy Roast Pumpkin Dip recipe is a deliciously healthy vegetarian / vegan recipe that’s easy to make & great for entertaining.

Ingredients

  • 3/4 cup roasted pumpkin (simply spread evenly cut pieces – about 1cm square – on a lined baking tray and roast at 180 degrees C until tender)
  • 1 avocado
  • 1 clove crushed garlic
  • 2 tsp lime or lemon juice
  • 1 Tbsp apple cider vinegar
  • 1 tsp wholegrain mustard
  • 1/4 cup nutritional yeast
  • 1/2 tsp sea salt
  • freshly ground black pepper to taste
  • 2 Tbsp water

Method

  1. Put all the ingredients into the Vitamix container in the order listed and secure the lid.
  2. Select speed 1, turn the machine on and quickly increase to speed 7.
  3. Use the tamper to effectively press the ingredients into the blades whilst processing.
  4. Blend for 30-60 seconds or until desired consistency is reached.
  5. Stop the machine and serve.
