Video Blog: Blissful Beetroot Dip

Hey guys! Today i am going to share with you a beautiful raw beetroot dip.¬†Beetroot is great for boosting your stamina and improving your digestion helping your body’s detoxification process. It is one of my favourite new recipes and i think you are going to love it.

Equipment

Ingredients

  • 1 cup raw beetroot (peeled)
  • 1/2 red onion
  • bunch parsley
  • 1/2 lemon (juice only)
  • 1/4 cup sunflower seeds
  • 1/4 cup olive oil
  • 2 Tbsp unhulled tahini
  • 1 Tbsp apple cider vinegar
  • 1 tsp nutmeg
  • 1 tsp mustard powder
  • salt and pepper (to taste)

Method

  1. Put all the ingredients into the Vitamix 2L container in the order listed and secure the lid.
  2. Select Variable 1. Turn the machine on and quickly increase the speed to 8.
  3. Use the tamper to effectively press the ingredients into the blades whilst processing.
  4. Blend for 30-45 seconds or until desired consistency is reached.
  5. Stop the machine and serve.
