Featured Friend Interview: Jenni Madison – Coconut Magic

Jenni Madison is the founder of Coconut Magic, a Kingscliff NSW based company dedicated to bringing you the finest quality coconut products. After her own experiences and health issues, Jenni has made it her mission to educate others on the healing properties of coconut oil and coconut products, hence the birth of Coconut Magic in Australia in 2011. Today Coconut Magic’s premium range continues to grow offering the finest quality coconut products and we are so lucky to have her join our Raw Blend family!

Jenni, we know living a healthy life is very important to you. Our mission here at Raw Blend is to help everyone create “A Healthy Mix for Life’. What does ‘A Healthy Mix for Life’ mean to you?

‘A Healthy Mix for Life’ for me means to view health from a holistic perspective. That is, to consider;

  1. What you eat
  2. Whom you spend your time with, and
  3. What you do for a living.

Creating A Healthy Mix for Life based on the above is to:

  1. Eat a wholefood, plant-based diet
  2. Nurture relationships and avoid toxic people, and
  3. Do what you love and/or love what you do.

I have known people who eat all the right things, exercise well and take great care of their body still develop health issues. They later found this happened because they were doing a job that they hate. I think that our emotional wellbeing must be considered as much as our physical for optimal health.

What does your day on a plate look like and why do you eat the way you do?

A day on my plate can vary so much depending on what is available, time of year and where I am. However, there is one common theme, I eat a wholefood vegan diet that is high in raw food. I also include plenty of coconut oil! It is summertime now so my meals are much lighter and the raw component is up.

7am: I tend to eat when I feel like eating rather than by the clock. If I am hungry in the morning I will have some raw granola with coconut yoghurt or homemade almond milk, or one of our Raw Energy Bars (cacao and coconut are my favourite).

Generally though, in the mornings, I don’t feel like eating too much, so a smoothie is perfect!

9am: My smoothie choices include strawberry almond milk, green smoothie and other mixed berry flavours, so they are generally pink, red or green, and will include some coconut oil and other protein or healthy fat sources such as nuts and seeds.

12pm: When the hunger kicks in, and it always does around 11am or 12 pm, my first meal of the day will consist of lots of raw vegetables. I might include a cashew mayonnaise, or creamy cashew dressing as this gives me the feeling of having plenty of calories and more healthy fats, or I’ll include some quinoa in my salads. I get plenty of highly absorbable plant-based protein from my daily greens, nuts, seeds, and almost all kinds of vegetables!

Snack Time: This can be any time of the day! I will top some crackers or raw bread with avocado, raw hummus, or zucchini dip. An additional topping will include tomato, cucumbers and sauerkraut. Yum!

If I feel like a sweet treats as a snack I will enjoy some raw vegan chocolate, store bought or home made, or a raw dessert cake such as my coconut and lemon slice or avocado popsicles. I make a herb tea, juice or a Coconut Magic Dandelion Latte if I feel like an afternoon pick me up or refresher.

Dandelion Latte is made just like a plunger coffee but using roasted dandelion instead, I then blend this in my blender with a shot of coconut oil, a pinch of vanilla essence and a hint of coconut nectar. It turns out all creamy just like a cafe latte, it is lovely!

A Raw Energy Bar is also a great snack any time of the day, especially if I am additionally active such as going for a hike, or doing a Yoga or NIA dance class.

7pm: My husband and I enjoy relaxing and making our food together in the evenings. He loves to add some potatoes to my raw creations, something like some potato mash, roast vegetables or sweet potato fries. I’ll prepare a zucchini pasta, mock ‘tuna’ salad or some raw tacos.

In winter time I love eating warm soups, including lentil, pumpkin, roasted vegetable as well as warm vegetable and lentil curries. During the colder months to keep my raw food component high I always include plenty of fresh smoothies, juices, salads, raw desserts and our Coconut Magic raw energy bars in my daily diet.

Living a healthy life doesn’t just mean eating well … how do you keep your mind and body healthy?

I live in a coastal town called Casuarina in NSW. A long walk along the local beach or the nature strip every day gives me a good dose of sunshine, clean air, friendly smiles, exercise and some mental clarity. There is also a private space (in the bush-land nearby) that I love to visit when I feel my mind activity or my emotions require some peace. It works every time I go there and sit!

I was introduced to NIA a few years ago. I fell in love at my first class. Nia is all about mind and body connection and body movement (dance). It involves the three arts, dance, martial and healing arts. I now attend Nia retreat once per year and I go to local classes frequently. I feel great when I do NIA and this type of body work.

Who is your health, wellness or fitness guru and why?

Professional vegan athlete Brendan Brazier is my health, wellness and fitness guru. I love his book Thrive Nutrition, his recipes and his extensive knowledge on vegan nutrition for health and fitness.

If you could share with the Raw Blend Family one piece of your wisdom what would it be?

Care deeply, feel strongly and act accordingly. Look beyond the food industry hype so that you can make choices that are aligned with your own personal values and truth. Challenge the status quo.

We are lucky enough to have you share one of your favourite recipes with us, why do you love this recipe?

I love this recipe because it is fun and easy to make. It is delicious, has plenty of coconut goodness and other high nutrition ingredients in it. I also make this nice and creamy using my very awesome Vitamix blender which I absolutely love!

Avocado & Coconut Popsicles

Prep time: 5 minutes

Freeze time: 2 hours

Serves: 4-6

Equipment

Ingredients

  • 2 ripe avocados
  • 400ml organic coconut milk
  • ¼ cup Coconut Magic coconut oil
  • ¼ cup Coconut Magic coconut nectar (or sweeten to taste)
  • 2 tsp freshly squeezed lime juice
  • 1 tsp vanilla extract

Method

  1. Combine all ingredients in a blender and blend until creamy.
  2. Pour into popsicle molds.
  3. Freeze for 1½ to 2 hours.
  4. Enjoy!

NB: Run popsicles under warm water to remove smoothly.
