Italian Eggplant Sauce

Makes – 600g
Serves – 4+
- 1 eggplant (peeled)
- 200g sundried tomatoes (approx)
- 1 bunch parsley
- 2 garlic cloves (peeled)
Ingredients – to stir in
- 3 tsp tahini
- 1-2 tsp water
- 1/2 lime
- 1 tsp soy sauce
- Use the open blank screen, remove the outlet adjusting knob and turn your juicer on.
- Alternate the ingredients into the feeding chute and use the tamper to push the ingredients down.
- Once you’ve finished juicing, stir in the extra ingredients, and serve over pasta or as a spread
- Store in a sealed jar or bottle in the fridge.
